Learning outcomes

At the end of the course, the student is able to: Know the official control in the field of food safety, the Definition of the type of operating methodology, and the registration minutes. Knowing the checklists, the methodology of use and national and regional control and surveillance plans. Know the official control with audit technique and the management of non-conformities detected in the context of the control.

Course contents

Introduction and definitions relating to official control in food safety, introductory notes on HACCP;

The procedure for the registration and recognition of food business operators;

The tools for the official control: the manual for the official control at OSA, the official control sheet, the non-conformity detection sheet and the check-lists;

The different official control techniques in food safety and the required checks;

Food sampling techniques and the compilation of the sampling report.

Readings/Bibliography

It is not necessary to purchase specific texts. Updated teaching material is provided in class.

Teaching methods

During the lectures, the general problems connected with the performance of control activities in the field of food safety will be discussed.

There are moments of group work in order to provide each student with the opportunity to measure themselves in the design of autonomous solutions to the real problems that will be posed.

Assessment methods

The verification of learning takes place through the final exam, which ascertains the acquisition of the knowledge and skills expected by carrying out a written test lasting 60 minutes without the help of notes or books.
