Learning outcomes

At the end of this course the student has acquired up  to date knowledge  on basic principles useful to investigate the problems of microbiology applied  to  bacteria involved in the production of vegetal  food,and the connection between  food and agricultural environment.  

Course contents

Food  Micro:bacteria,production  of wine,beer,milk,fermented milk.Probiotics and prebiotics in food.Functional food:claims,nutritional and health.Industrial production of fermented food.

Food and agricultural environment : bioremedation and food contamination.Compost:role of microorganisms ,evolution and optimization  of  environmental conditions.

MGM applied to plant production:problems,future,economic impact.

Readings/Bibliography

The teacher will give  notes at the end of each  lesson.

Teaching methods

At the end of Course will be organized a visit to the Laboratory of Microbiology.

Assessment methods

The evaluation of the student will be acquired by oral examination.Students  wishing to take the examination in English are allowed.

Teaching tools

The lessons are held in rooms equipped with a blackboard withboard and Pc.
