Abstract

The project focuses on disentangling the interdependence of determinants and impacts of eating behaviour, by using econometric modelling, virtual-life choice experiments, and eye tracking technologies. We aim at identifying strategies to promote more sustainable diets in the Italian population. This is motivated by the increasing importance – also emphasized in the EU "Farm-to-fork strategy" – of promoting sustainable consumption patterns due to their environmental, economic and social impacts. The project is structured in six work packages (WPs). WP1 focuses on the analysis of consumption patterns towards plant-based food in relation to animal-origin products, and towards ultra-processed foods. A survey will be implemented. Data will be analysed via econometric models and results will be used to define the determinants in the decision-making process for plant-based diets, meat-based diets, and the consumption of ultra-processed foods. WP2 will explore determinants of food choices and the effect on eating behaviour of information on nutrition and health, by using a choice experiment approach. Discrete choice models will be estimated to retrieve the role of different food characteristics (nutrient contents, cost, etc.) on consumers’ choices. WP3 will also investigate food choices and the information effect, via a field experiment in which a real food shopping scenario will be simulated. Observed choices will be analysed by means of multiple-discrete continuous choice models, which will allow to retrieve the determinants of food choice and food consumption levels. Results will also be used to validate in real choice contexts those obtained from WP2. WP4 will use eye-tracking technologies (ETT) to study how individuals process information in food purchase occasions. ETT will be used in both online and field experiments. WP5 will investigate determinants of food waste behaviour via a survey and choice experiment approach. Then, based on results from econometric analysis of collected data, specific interventions in public canteens will be implemented to better define the relations and the role of behavioural drivers of food waste. WP6 will be dedicated to dissemination of the results. It will focus on scientific dissemination and communication to policymakers and the general public. Communication will be aimed at identifying the most effective policy tools to promote the adoption of more sustainable eating behaviour among citizens.
