Abstract
In the last decade, the Italian brewing industry has undergone an important increase in production, which shows a polarized structure, divided between large industrial groups and a great number of small companies, especially microbreweries and agricultural breweries. Consequently, the Italian beer supply chain currently shows an insufficient production of raw materials, which translates into a strong import from abroad. In this context, the project will contribute to the development of the Italian beer supply chain in terms of innovation, environmental and socio-economic sustainability to overcome the new challenges on a global level. The goal will be reached through technological innovations aimed to enhance productivity and sustainability, such as low input and organic cultivation of new barley varieties and optimization of malt production and hop transformation, to reduce their environmental impact through savings in energy and water consumption. The technological innovations will be analysed for their environmental and economic impact, and management solutions will be proposed to improve resilience and competitiveness.
