95984 - Strategies to Improve Safety of Foods of Animal Origin Within Circular Agricutural System

Learning outcomes

At the end of the course, the student is familiar with the health regulations on derived products not intended for human consumption. In particular, he knows how to analyse and evaluate the role of the feed industry and establish the risk of consumption of these products for animal and human health, he knows how to validate different nutritional strategies to improve the hygiene and safety of products of animal origin through metagenomic approaches and he knows methodologies and approaches to ensure the safety of food of animal origin.

Course contents

This course is part of the integrated course 95967 FOOD ANIMAL NUTRITION AND FEEDING FOR SUSTAINABILITY AND SAFETY (I.C.)

At the end of the course, the student is familiar with:

• food system concept;
• biological hazards in foods of animal origin;
• EU approach to food safety;
• EU health rules as regards to animal by-products and derived products not intended for human consumption;
• microbiome-based strategies to improve food safety;
• strategies to deal with food safety assessment and management.

Assessment methods

The examination consists of a written test which can be repeated a maximum of three times.

In the written tests there are questions related to the contents of the frontal lessons. The score associated to the answer to each question is clearly indicated in the test. The maximum score for this part of the test is 26/30.

The written test contains also questions related to the active learning activities. For the students performing the active learning activities in presence, the quality of the work done and the level of student engagement is assessed. For the students non performing the active learning activities in presence, specific material will be provided. The maximum score for this part of the test is 4/30.

The result of the test will be communicated within two days. The minimum passing grade is 18/30.

The final exam score is awarded as weighted average with module 95983 - NUTRITION AND FEEDING TO IMPROVE FOOD ANIMAL EFFICIENCY WITHIN CIRCULAR AGRICULTURAL SYSTEM.

Students can register for exams through the AlmaEsami platform (http://almaesami.unibo.it/) or sending an e-mail. Exams are scheduled during the designated periods in the academic calendar. Additional sessions are available for students beyond the standard program duration. Additional sessions can be requested by e-mail.
