Learning outcomes
Upon completion of the course, the student will be familiar with substances found in food—whether due to natural processes, contamination, or adulteration—as well as the main sampling methods and the adverse health effects associated with their presence. Specifically, the student will be able to: identify potential food contaminants; understand sampling methodologies and analyses relevant to assessing exposure-related risks; and comprehend the significance of regulations and limit values.
Course contents
EU regulatory framework for food safety: terms, definitions, and legal references
Key factors leading to a lack of safety requirements in food:
Veterinary drug residues – EU monitoring and analysis plans
Major environmental contaminants causing food contamination
Process contaminants
Biological contaminants
Risk assessment associated with the consumption of contaminated food
Materials and articles intended to come into contact with food
Microbiological contamination
Readings/Bibliography
During the lessons, the texts most suitable for the topic being covered will be cited.
Teaching methods
The course will be conducted using slide presentations.
Assessment methods
1.The exam will be administered in person, except in the case of local health/flooding conditions, risk areas as per the new regulations, and/or the student's vulnerability (assessment will be carried out by the DSA service). Cases will be assessed individually and, if they meet the requirements, may be taken via the TEAMS platform.
2.Registration takes place on the Almaesami application.

The Office will advise the affected students of any adaptations, which must be submitted to the instructor for approval at least 15 days in advance. The final exam aims to verify and evaluate the achievement of the learning objectives. Learning assessment will be done through a written multiple-choice test, with specific questions on the topics covered.
