Learning outcomes

The main aim of this learning package is to spread some sort of practical knowledge around the most famous (or reputedly infamous) animal foods, how they can satisfy the nutrient requirements of adult men and women according to the most recent Italian LARN (2012), how to assess their main sensory traits.

Course contents

Improving the quality of animal foods through the to ols of sensory analysis

(Several single flower honeys will be used to illustrate what sensory descriptors are and how they works).

 

Milk and dairy products: from the knowledge of the mere chemical composition of these foods to their nutritional and dietetic strengths and weaknesses, to an unprecedented capacity to outline their main sensory traits.

  Muscle foods both of the usual and the (highly) improbable kind, ending up to sausages: how they fit in with a healthy lifestyle and how they taste.
