Learning outcomes

The teaching of microbiological risk analysis and traceability techniques as part of the integrated course "Quality and microbiological safety of food of animal origin," wants to answer some priorities defined by the EU Commission on the theme of food safety for consumer, building the so-called "One health approach" which will promote the prevention of health risks and prioritizing qualitative aspects in food of animal origin. The primary learning objective of the course is represented by the acquisition by the student of general knowledge on the analysis of the microbiological risk, the use of traditional and molecular methods for the traceability of foodborne bacteria in different food animal chains . Other learning goal is that students learn to use it appropriately and critical tools that allow you to obtain information relevant to the discussion of specific subjects, helping to build a conscious decision-making autonomy. The teaching of the course will be based on the active involvement of the student with large parts of "self-directed learning", understood as teamwork and personal development.

Course contents

The course contents include:

1) The concept of microbiological risk analysis 

2) Qualitative and quantitative risk analysis

3) Risk ranking for microbiological hazards in foods of animal origin

4) Traceability of foodborne bacteria at genus, species, by  using phenotypic techniques

5) Traceability of foodborne bacteria at clone level through the use of molecular techniques (eg. PFGE, MLST, MLVA)

6) The main international database of foodborne bacteria : description and demonstration of use

7) Qualitative (susceptibility) and quantitative (MIC) assessment of antibiotic resistance in zoonotic bacteria

8) Knowing how to find, analyze and distinguish useful information from various sources, written and digital, the scientific literature and Regulations, Laws and Guidelines

Teaching methods

Oral lectures, scientific seminaries, laboratory activities.

In relation of the types of activities and teaching methods adopted, the attendance of this training activity requires for all students to carry out by e-learning the Modules 1 and 2 [https://www.unibo.it/it/servizi-e -opportunities / health-and-assistance / health-and-safety / safety-and-health-in-places-of-study-and-training] and the participation in Module 3 of specific training on safety and health in study places . Information on dates and methods of attendance of Module 3 can be consulted in the specific section of the degree program website.

Assessment methods

The exam consists of an oral interview aimed at ascertaining the level of theoretical and applicative knowledge of the student. .

To pass the exam, the candidate must reach a mark of 18 out of thirty in each of the 3 questions asked.

The evaluation will be assigned according to the following criteria:

- A very thorough knowledge, ability to know how to move within the different topics together with the achievement of an organic vision by the student of the topics addressed in class. Will be evaluated with the maximum score (30-30L).

- An depth knowledge, ability to know how to move within the different topics together with the achievement of an organic vision by the student of the topics addressed will be evaluated with good marks (27-29).

- A technically adequate preparation, a sufficient analytical capacity, even if not particularly articulated, will produce discrete evaluations (23-26).

- Sufficient preparation and analytical skills will determine sufficiency (18-22).

Access to the trial is free. The test lasts at least 20 minutes and aids are not allowed, except for students entitled to use it. The dates, times and locations / methods of the exams are published on the degree course website.

Students wishing to take the exam in English must request it from the teacher before the exam session begins.
