A Comprehensive Review is now available on Broiler Breast Abnormalities

review paper published on the prestigious journal "Comprehensive Review in Food Science and Food Safety" dealing with white-striping, wooden-breast and spaghetti-meat abnormalities is available.

Thanks to the collaboration with Mario Estevez (University of Extremadura) and brazilian colleagues from Londrina University (M. Madruga, L. Carvalho and Elza Ida), we have been able to put together a comprehensive review by collecting relevant information from studies aimed at understanding the pathological mechanisms of these abnormalities, their phisicochemical and histological characterization and their impact on meat quality and consumer's preferences.
