Learning outcomes

The student must be able to analyze a HACCP planof a dairy plant, assess the hygiene problems and to identify the depth to be implemented to solve it

Course contents

The program includes a lecture on the technologies of production of dairy products and methods to control contamination (HACCP), then students will be provided with the HACCP plan of the dairyplant of the Faculty and will be askedthem ahealth issues to be investigated under the guidance of the teacher by to provide a solution. The insights willdone by sampling in the cheese factory of the faculty and analysis in thelaboratory test service for Hygiene and Food Technology, and the results will be discussed with the teacher.
