Food falsification is a main problem in the Italian agro-food industry, where there is a large number of important producer and high quality products. Among them there are lot of valuable animal product.

Some of these products have been valued with a marketing policy aimed to the protection of product and meat of some particular animal bred, representing local and traditional high quality production. These particular product represent an incentive for breeding of indigenous race that are less productive than others, and this allows the preservation of this genetic variety.
