The work provided in collaboration with "Mullus barbatus barbatus CONAD del Tirreno" concerns the sensory evaluation of the freshness of fish, molluscs and crustaceans according to the species-specific method devised by QIM - Eurofish, now widely applied worldwide. As part of this collaboration, "CONAD del Tirreno" was assisted in identifying, preparing and, lastly, applying QIM schemes for the most important finfish and shellfish species. Mullus barbatus barbatus was the first species we successfully decided to study, out of its economic relevance.

Description:
This collaboration started in 2013 to allow to achieve shared and specific research objectives (specifically the nutritional and sensory characterization of some species of octopus, as well as two species of mullet). Since 2017, this collaboration has taken the golden tinge of participation in a complex training design for the benefit of internal sales forces.

A cooperation deal was established with the Ancona branch of the IZSUM, in order to ascertain content and true retention of elements of both nutritional interest (iodine, selenium) and toxicological value (lead, cadmium, mercury, arsenic and chromium) in the edible portion of many species of finfish and shellfish caught in Mid-Adriatic and analysed by ICP-MS.

Research work has been conducted with the Dipartimento di Produzioni Animali, Biotecnologie Veterinarie, Qualità e Sicurezza degli Alimenti into the definifition of the mineral profile of seafoods, both at the raw and the cooked state, special attention being also paid to a speciation effort for elements of toxicological interest.

Description:
This cooperation deal was established with the Reasearch Centre for rabbit, avian and seafood species of the Faculty of Agriculture, placed in Ozzano Emilia. Our aim was to define a reapeatable and reproducible procedure in order to determine the textural features of the flesh from small-to-medium size specimens of fish species both farmed and caught in the wild, an up-to-now never examined issue.
