Short Bio

Senior assistant professor (fixed-term) at the Department of Department of Agricultural and Food Sciences of the University of Bologna since 2022, performing research in the field of food microbiology. In particular, her research interests concern the evaluation of the effects of fermentation processes on the quality and safety characteristics of fermented foods, the selection of microbial strains for industrial use, the study of the antimicrobial characteristics of essential oils and their components, the physiological responses of microorganisms subjected to stress conditions and their response mechanisms. She is involved in several international and national projects and is author and co-author of more than 80 publications in scientific journals indexed with Impact Factor. Go to the Curriculum vitae
