Current position 

Full-time Researcher in food hygiene and technology, scientific-disciplinary field VET/04 Food Inspection, at the Department of Veterinary Medical Sciences (DIMEVET), University of Bologna.

1997 to present: working actively to implement and maintain the Quality Management System of the Department of Veterinary Medical Sciences, University of Bologna (Ozzano Emilia: 1997-2014; Cesenatico: 2014 to present) and she is a member of the working group "Documentation" (2012-present).

2001-2005: member of Council of Biotechnologies Veterinaries Degree Course, University of Bologna.

Research activity

Study of the shelf-life of foods.

Microbiological Challenge Testing (MCT) for process and food products, using target microorganisms.

Study of marine biotoxins.

Study of polar lipids in blue-back fish.

Development of fast diagnostic techniques and bio-molecular methods to detect pathogenic bacteria in environmental samples and in foods.

Development of bio-molecular techniques to detect the main virulence factors of food pathogenic bacteria.

Detection and/or enumeration of pathogenic bacteria such as Salmonella spp., EHEC, EAEC, Listeria monocytogenes, Campylobacter spp, Clostridium perfringens, Staphylococcus aureus, Pseudomonas aeruginosa and other food-borne pathogens in intestinal contents, faeces, environmental samples, meat, meat products, fishery products, milk and milk products, eggs and egg products.

Effect of substances on the poultry and swine intestinal microflora.

A new food chain approach for voluntary certification UNI EN ISO 22005:2008; prerequisite programmes in own checks in statutory and voluntary legislation; HACCP in food chain with particular reference, but not exclusively, to that of meat and meat products.

Studies of problems of slaughter hygiene.

Implementation of the Codes that discipline to the import/export of the meat products in the USA and in Japan.

Study of the food safety and HACCP in the milk products industry.

Study of food chemical contaminations for zootechnical use with influence on the food safety.

Study of the enforced rules on the food transport in sight of the European rules on the food hygiene.


Other work experiences

1993-2000: food inspection and hygienic and quality control of foods and equipments (sampling and analysis) in the convention between Regional Company for the Right to the University Study (Emilia-Romagna, Italy) and DSPVPA (University of Bologna, Italy), and in the convention between Asl n. 22 of Bussolengo (Verona, Italy) and DSPVPA (University of Bologna, Italy).
