The research activity is focused on the field of Food Science and
Biochemistry of Nutrition. The research is directed to the study of
the mechanisms by which certain nutrients and compounds of natural
origin are able to promote the maintenance of health status.
Particular attention was paid to the identification of compounds of
natural origin with potential indirect antioxidant against muscle
injuries that occur as a result of exercise to exhaustion. At the
same time the research was aimed at assessing levels of physical
activity and, more generally, the way of life of the population in
order to identify those behaviors that may promote the maintenance
of a good state of health in the long term.
