Course objectives

The sustainability of wine production is facing new challenges and will need to develop increasingly effective measures in response to external structural factors such as climate change and a drastic reduction in consumption; contingent factors such as economic difficulties and geopolitical turmoil; and strategic factors such as multifunctionality and the globalisation of consumption and social behaviour. Against this backdrop, whilst the training of oenologists remains of paramount importance in safeguarding local identities and maintaining their close link with gastronomy, the opportunities offered by new technical, mechanical, biological and IT technologies, as well as genetic improvement, must not be underestimated. The primary objective of ethical, social and environmental sustainability cannot be separated from economic sustainability, which – in quantitative, qualitative or mixed production models – must provide for productive synergies, the pooling of resources for investment, regional agreements (including those aimed at protecting geographical identities), solid entrepreneurial foundations and strong institutional relationships.
