Learning outcomes

At the end of the course the students should know the contaminant that could be present in food by natural or voluntary contamination. Furthermore the main methods of sampling and adverse health effects will be illustrated

Main contaminants in food:

Veterinary drugs and residues: types and analytical methods

Environmental pollutants: types and analytical methods

Process contaminants: types and analytical methods

Main biological contaminants: types and analytical methods

Risk assesment of some contaminants
