Learning outcomes

The teaching of microbiological risk analysis and traceability techniques as part of the integrated course "Quality and microbiological safety of food of animal origin," wants to answer some priorities defined by the EU Commission on the theme of food safety for consumer, building the so-called "One health approach" which will promote the prevention of health risks and prioritizing qualitative aspects in food of animal origin. The primary learning objective of the course is represented by the acquisition by the student of general knowledge on the analysis of the microbiological risk, the use of traditional and molecular methods for the traceability of foodborne bacteria in different food animal chains . Other learning goal is that students learn to use it appropriately and critical tools that allow you to obtain information relevant to the discussion of specific subjects, helping to build a conscious decision-making autonomy. The teaching of the course will be based on the active involvement of the student with large parts of "self-directed learning", understood as teamwork and personal development.

Course contents

The course contents include:

1) The concept of microbiological risk analysis 

2) Qualitative and quantitative risk analysis

3) Risk ranking for microbiological hazards in foods of animal origin

4) Traceability of foodborne bacteria at genus, species, by  using phenotypic techniques

5) Traceability of foodborne bacteria at clone level through the use of molecular techniques (eg. PFGE, MLST, MLVA)

6) The main international database of foodborne bacteria : description and demonstration of use

7) Qualitative (susceptibility) and quantitative (MIC) assessment of antibiotic resistance in zoonotic bacteria

8) Knowing how to find, analyze and distinguish useful information from various sources, written and digital, the scientific literature and Regulations, Laws and Guidelines

Assessment methods

The oral examination will verify the theoretical and applicative knowledges of the student. Particularly positive will be evaluated the ability to move within the different topics and the achievement of an organic knowledge of the topics presented during the lessons.
